Ingredients:
- 4 large russet potatoes
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup butter
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, thinly sliced
- Salt and pepper to taste
Instructions:
Preheat oven to 400F 200C
Wash potatoes and pierce them with a fork
Place on a baking sheet and bake for 1 hour or until tender
Remove potatoes from the oven and let them cool slightly
Slice off the top third of each potato lengthwise
Scoop out the flesh into a bowl, leaving a thin shell
In a mixing bowl, mash the potato flesh with sour cream, milk, butter, half of the cheddar cheese, half of the crumbled bacon, half of the sliced green onions, salt, and pepper until smooth and creamy
Spoon the mashed potato mixture back into the potato shells
Top with remaining cheddar cheese, bacon, and green onions
Return the potatoes to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly
Serve hot and enjoy!
