A hearty soup with meatballs and mushrooms that tastes like the outdoors. Great for a cozy meal.
Ingredients:
- 500g ground beef
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 200g mushrooms, sliced
- 6 cups beef broth
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions:
Mix the egg, salt, pepper, breadcrumbs, ground beef, and Parmesan cheese in a bowl until everything is well mixed
Make small meatballs out of the mixture
Put olive oil in a big pot and heat it over medium-low heat
Put in the minced garlic and chopped onion
Cook until the onions are soft
Put in the sliced mushrooms and cook them until their juices come out
Put in the beef broth and raise the heat
The meatballs should be cooked all the way through after being added to the soup
Add the heavy cream and chopped parsley and mix well
Let it cook for five more minutes
Enjoy while hot!
